KMB, you might want to check out the CEO Party Boat forum as we'll be talking about blackfish alot and have done so in the past.
As to the other bait, I bet it was "white-leggers"

Ok will do. I use fiddlers in the PPC but I perferr green crabs if I go out to wrecks, or S. Rocks.

Fiddlers work well where you mentioned, but I've gotten better fish on greenies there
Overall, I'll use greenies most of the time. Can't find "white leggers" locally so use them when they're around. Asian Shore crabs work well at times and pretty easy to find by flipping rocks over at low tide locally.

I'd say it depends.
If you're on a p-boat and the angler next to you is using designer crabs, then most likely you will get skunked. However, there have been days when the plain ol' greenies are what the whitechins want. Further, if I'm after a slob rather than just meat for the table, I will use a larger profile (white/stones) crab.
In the end, it's like any other type of fishing. "adjust accordingly".
But what do I know?

Sand crabs work the best on the north jetty. There was a kid there 2 yrs ago he was hooking four fish to my one ,he was using sand crabs, so i went and dug some up, and whamo i started catching just as much as him.

The 2" ones are not that big at all. I use the whole thing. Softshell pattern works for me, however at +100' depths I'm sure all would work well. I don't think cutting them in half would work unless you dipped them shedder oil. Dunno, never tried it.

ever try the 4"ers for some monsters?
so whats your normal rig? just one real crab down low and the other fake one up top?
I think I might order some of these things. oh yeah, how do you hook them usually?

When I use big bait like I snell the first hook(black) then just slide the leader though the eye of the second hook(black), and impale both hooks into the bait. At the other end of the leader I put a barrel swivel and an egg sinker on the main line. This keeps from getting stuck in the rocks. If I use fiddlers I will use a dropper loop for the top hook. I'm not a black fish expert I go a few times a year but this works ok for me.
It's not the only way to fish, but it should be!
