Do they swim different ?
Danny's pivot midship (larger baitfish gliding) surfsters pivot at the nose (smaller baitfish splashing)
Is one for rough water ?
In very rough water neither, in slightly rough water the surfster will hold up better
Why choose one over the other ?
Personally I only fish med & large Danny's, prefer Danny's at night in calm waters when big bait is around. I fish surfsters day and night in many different surf conditions in sm & med sizes for smaller bait. Surfsters are fished at various speeds and depths, Danny's are fished only on the surface at super slow speed, therefore surfsters are more versatile plugs.
BTW, the Danny style plug is a pretty specific shape and action. I think the term surfster was first used by CCBC, it's more a general style of a plug that can vary from one maker to another.
Noticed you live in NJ, the quintessential NJ surf plug is the red western sealed variation of a surfster originated by "Lefty" Carr which now copied by dozens of commercial and private builders. If I had to choose one wooden plug for NJ this would be it.
