So we're just back from Placencia, Belize and all I can say is... Go there as soon as you can.
Placencia in the South is a part of Belize that is still much less "discovered" than places like Ambergris in the North. It's a peninsula surrounded by water - Caribbean on one side and Placencia Lagoon on the other. Both offer great fishing.
No matter the target - snook, snapper, billfish, wahoo, king mackerel, barracuda, tarpon, bonefish, permit, etc. - the fishing is tremendous. My son caught a nice king and the guide took us to a local caye and cooked it up for us.
On another trip, I spent 6 hours (4-hr trip, but he gave me 2 extra because he was having a good time - who does that?) with a guide on the reef and while I saw (and spooked) upwards of 25 permit, I did not see another person all day. Got to love that fish-to-fisherman ratio.
Definitely a trip to put on your bucket list.
